Recipe:Beef and Cabbage Soup

When I am not feeling well and a lot of the time when I feel good, I LOVE soup and one of my all time favorites is my rendition of Shoneys Restaurant’s Beef and Cabbage Soup. It is hearty and filling, and you can add a salad and
some french bread for a complete meal.

In a CrockPot or slow cooker:
1lb ground beef
1 medium onion – chopped
40 oz can tomatoes
2 cups water
15 oz can kidney beans
1tsp salt
1/2 tsp pepper
1 tbsp chili powder
2 cups sliced cabbage
Saute the beef in a skillet and drain. Then add all ingredients except
cabbage in crockpot. Cover and cook on low for 3 hours. add cabbage and cook on high about 45min to an hour.
Now if you are like me and have arthritis in your hands, or just don’t want
to do any chopping, you can use dried minced onions and my favorite cabbage in a bag that you find in the same section you find bagged salad.
You can freeze leftovers to have anytime.
