Recipe: Easy Macaroni Salad

 

This is something my grandmother used to make. She never measured and went on taste alone, but that shouldn’t matter because it’s almost impossible to mess this one up.


What you’ll need:
elbow macaroni (for gluten free, use rice or corn macaroni)
tomatoes (cherry, grape, or the regular kind)
green bell pepper
mayonnaise
onion salt
tiny canned shrimp
Cook the macaroni as directed on the package. Drain, rinse in cold water, and place in large bowl. Cut tomatoes into bite-sized pieces and add to macaroni. Chop bell pepper and add to tomato and pasta. Drain canned shrimp; you may want to rinse it if you find it too salty. Add shrimp to salad. Mix in mayo and onion salt to taste. Refrigerate if you’re not going to eat it right away.
This is a favorite at pot lucks or large family gatherings. Keep in mind, though, that because it contains mayonnaise, you may not want to bring it to a picnic or leave it sitting out for too long. Promptly refrigerate any unused portion.
