Recipe: Easy Dinner Treat! Sheila’s BBQ “Coke Pork”

 

OK yes it does sound weird, BUT the Coke does something chemically to tenderize the meat! It also works well to do this identical recipe with a beef roast.


In large roaster place in this order:
1 tbsp dry onion flakes sprinkled
1/4 cup of Gates BBQ Sauce
Place pork loin roast in pan
Pour 1-12 oz. can Coke over roast.
Stir liquids in pan to combine.
Salt/pepper to taste
NOTE: DO NOT ADD WATER!!
Seal with foil or roaster lid and bake for 350º for 15 minutes. Then reduce heat to 225º and bake for 6-7 hours. Do NOT take off the lid during this time. At the end, remove cover. Shred meat with knife/fork. Pour another 3/4 cup of BBQ sauce over it (if desired) and stir everything up to combine. Re-seal with foil or cover. Bake an additional 6-8 hours on 175º.
Delicious served as sandwich meat on toasted buns with traditional picnic fixings!
Timing-wise, this works well to put in the oven the evening before. Time it so that you start the second baking period right before you go to bed. Then when you get up you can put it in the fridge to cool until later (which improves the flavor even more!) Just do whatever works well with your dinner timing and your schedule that will make it easiest for you. Either way, this meal is virtually “no-work!”
