Recipe: Easy Broccoli Bake

 


INGREDIENTS:
1 package (10 ounces) frozen broccoli cuts
3 eggs
1/2 cup mayonnaise
1 small onion, finely chopped
1/2 cup shredded sharp Cheddar cheese
salt and pepper
PREPARATION:
Cook broccoli 3 to 5 minutes; drain. Whisk together eggs and mayonnaise; add broccoli and onion and cheese. Add salt and pepper to taste. Place in a
greased casserole. Bake at 350° for 35 to 40 minutes.
Serves 4. (You will need to double it according to your number of guests)

    I dont want to be too dreary and trot out the conditions I have (Loved your t-shirt “Sick and Tired of Being Sick and Tired”. ‘Nuff said?). It is enough to say that I look healthy and sound healthy and therefore totally qualify for your daily newsletter!! I have often thought that even if I hand-amputate a limb and crawl into my doctors, heamorrhaging and on the point of death, the final thing I hear is “But you look alright”! Or even “Now you are just being oversensitive and imagining things!”
    It is so supportive to have your site to rely on. I belong to other sites for fibromyalgia and for vulval pain. There seems to be a co-relation for women who have vulvodynia to also have fibromyalgia and a whole host of other related grotty conditions.But it doesnt matter what the condition is when it is invisible,the situation is the same trying to engage with family and health professionals!!
    I have made sure I have posted your link on our sites since not only I but all the women I know with vulval conditions have such a hard time trying to get help and treatment. I think the t-shirt that most of us would will want to buy is “No! Its not all in my head!”
    So I am just sending this to say how I find your site so helpful!!! I was going to go to the cinema but I overdid it in my garden on this wonderful spring day and have no spoons left! Poor pacing strategies at times when that “I can just do a little bit more….” takes over common sense and past experience of my body! So I shall stay home and light the fire and be warm and cosy, delaying gratification and see the film another day when I shall make sure I use my spoon for this pleasure and not on my garden!!
