Recipe: Crazy Good Carrots

This recipe may literally be the easiest recipe on the face of the earth. Not only that, but it’s delicious and healthy. Plus, it’s a perfect recipe for a family dinner, dinner parties, potlucks, and holidays.
Remember carrots are full of beta-carotene which is an anti-oxidant and by cooking carrots slightly (which you’re doing here) it helps your body absorb the beta-carotene.
Prep Time: 3 Minutes
Cook Time: 1 Hour
What You Need:
Bag of baby carrots (any size to your liking)
Salt
Pam or cooking spray
Cookie Sheet/Baking Pan
Tinfoil or Parchment Paper
1. An hour before dinner-time preheat the oven to 400 degrees.
2. Line baking pan with parchment paper or tinfoil. If you line with tinfoil than spray the pan with cooking spray to ensure the carrots won’t stick.
3. Open carrots and spread evenly on cookie sheet.
4. Spray carrots with a thin coat of cooking spray and a few shakes of salt.
5. Pop in oven.
6. Every twenty minutes or so check the carrots and shake the baking pan so that the carrots roll around a bit to ensure all sides get cooked.
7. Let cook for an hour. The natural sweetness of the carrots will come out and they will be soft on the inside and crispy on the outside. So yummy, almost like carrot candy!
