Quick Make-Ahead Summer Treats!

 

Dog days of summer call for cool treats that refresh you without a lot of work! These little “popsicles” are very easy to make ahead in quantity. Just pop into the freezer and enjoy whenever you wish!


I have made the recipe substitution-friendly for those of you who have special dietary needs. Just choose one each from categories A, B and C.
Combine one item each from lists A, B and C in a blender and blend just until ingredients are combined. Add 1 tsp Vanilla extract (or another flavor extract if you prefer!) Pour into tiny bathroom drinking cups. Place in freezer. When frozen about halfway, insert a popsicle stick (or a fork!) into center of each popsicle. Wrap each popsicle individually with Press N’ Seal wrap and continue freezing. NOTE: If you prefer, just pour mixture into ice cube trays and wrap entire tray with wrap. Remove desired number of cubes and serve in a bowl as needed.
I just made some using 1 cup of half & half, 1 cup of Edy’s No Sugar Added Vanilla ice cream, 4 large strawberries, 2 bananas, and a tsp of vanilla. Mine made 9 little cups. I’ll admit one of them didn’t make it to the freezer because it was a pretty fabulous milkshake too!!
List A – 1 cup of:
Unsweetened Fruit Juice
OR Half & Half
OR Heavy Cream
OR 1 container of yogurt
List B
2 cups Fresh fruit, chopped small – any kind
AND/OR fresh shredded coconut, peanut butter, chocolate chips, anything you want!
(Example you could choose peanut butter, chocolate chips and bananas!!)
List C
1 cup no sugar added sherbet
OR 1 cup no sugar added ice cream
OR 1 cup regular ice cream any flavor
OR any type pudding, prepared according to directions
