Recipe: Lemon Blossoms


Yellow cake mix
4 eggs
3.5 ounce box of lemon pudding
¾ cup of oil
Throw everything all together in a large bowl and beat for two to three minutes batter will be a little thick so don’t worry. Turn up beater and cream together for a couple minuets
Take a Mini muffin pan spray with Pam or any non-stick spray, fill pan half full of batter bake in a 350 degrees preheated oven and bake for 12 min.
1lb box of confection sugar sifted
1 lemon zest
3tbs oil
3tbs water
1/3 -1/2 cup of fresh lemon juice
Add all together and mix if it’s to thick add more water, if to thin add more sugar.
Take muffins upside down and stick a fork in it and dunk it completely in the glaze, make sure you only stick the fork in the bottom not the top so that you don’t see the fork prints. You can let them dry and then re-dip them for a thicker glaze.
