Recipe: Quick Lower Sugar Cinnamon Raisin Pudding
When you are craving something hot, sweet and delicious on a cold fall evening, try this!
Prepare 2 cups of regular or instant rice according to package directions. Add a dash of salt.
When rice is cooked, drain and add:
1 cup milk
1/2 cup of raisins
1 teaspoon of cinnamon,
1/4 teaspoon nutmeg
1 teaspoon of margarine
1/2 teaspoon of vanilla.
1/2 cup Splenda (or real sugar if you wish)
Bring to a boil, reduce heat to low and simmer for about 5 minutes until raisins are tender. Raise heat back up slightly to boiling point and add 1 tbsp of Jello Vanilla Instant Sugar Free Cook & Serve Pudding Mix to mixture while stirring quickly. (Reserve rest of pudding mix for another time). Boil just until thoroughly combined, mixture will thicken rapidly. Add a little more milk if needed to desired consistency. Enjoy!!
PS – This same recipe works just as well with prepared oatmeal and you get the flavor of oatmeal raisin cookies without the work!
